Making The Perfect Espresso at Home

For a coffee lover, nothing sounds more delightful than a shot of espresso. Making an espresso basically involves extracting concentrated flavours out of the ground coffee beans with the help of pressurized steam. Although a number of espresso machines are available in the market, most of them are used to make espresso on a commercial scale. However, you can even make the perfect espresso at home without spending big bucks on fancy machines.
To start of this process of making the perfect espresso, you need to get yourself the right espresso stovetop. Opting for a steel body stovetop produces better tasting espressos as aluminium involves the concern of being toxic and somewhat corrosive. Stainless steel also cuts out the possibility of staining. Traditionally, these stovetops are called known as ‘Moka’ in Italy. The next and the most important thing to get in order is, perfect ground coffee beans. For beginners, it is advisable to start making espressos with Arabica beans than Robusta as the latter has more caffeine content and tastes bitter. Arabica beans ensure the espresso stays sweet. You can try experimenting with the ratios once you are familiar with the whole espresso making method. Another preparatory step you mustn’t miss is using pure water to steam through the beans. Tap water generally has an odour along with it and the minerals present in it may not assist the process of concentrating the flavours well, hence it is essential to use filtered water to make the prefect espresso at home.
  • Fill the stovetop’s base with water up till the valve. The water needs to be heated right from the room temperature to around 90 degree Celsius.
  • Place the strainer on the base and eliminate the water perforating through it. Missing this step could lead to a foul stench and taste.
  • The next step is to properly place the ground coffee into the strainer. Make sure you do not waste much coffee by packing the strainer to its full capacity. Little ventilation would ensure the steam to move through the beans and extract the best out of it.
  • Then screw the upper half of the stovetop to its base.
  • Next in line is brewing the coffee on a low flame stove and low flame helps the extraction process. Hasting through this step would make your espresso taste bitter.
  • The final step is to open the lid as soon as brewing initiates. This prevents the condensed moisture on the lids to mix with the freshly prepared espresso. Wait till the brewing stops and serve the espresso right away!
This freshly prepared espresso can be further mixed with certain other ingredients to make lattes and cappuccinos.

How to cook a lobster

Lobster are often extensively high priced at the restaurants and that is the reason why they are tagged as the ‘Delicacy for elite classes ‘.  But to enjoy this delicacy at cheaper rates you can prepare it at home by yourself and treat your taste buds with this delicacy. Cooking Lobsters isn’t a big deal anymore. Simply follow the guidelines and steps mentioned below to cook a lobster and enjoy this lavish meal at home.
  • You need minimal number of ingredients which includes a live lobster, a large pot of seawater/ salted water, butter, bread (optional for dipping into the lobster-infused butter) and a 8-quart large pot for cooking one lobster.
  • For cooking lobster preferably try getting sea water in order to retain its flavour. If you don’t have seawater, never mind you can always use salted tap water. To add luscious flavour to lobster add ingredients like bay leaves, parsley, white wine, peppercorn, celery, garlic, carrots or onions to the water and boil it vigorously. Fill at least 3/4th of the pot with this water.
  • Get hold of the lobster by its tail, hold it upside down and first insert his head in to the boiling water. Cover the pot and let it boil again.
  • Note down the time when it first comes to boil. From that time, let it boil for another 15 minutes (Estimation for cooking 1 lobster only).
  • Once the lobsters are cooked properly they will turn to a bright red colour. If the lobsters are large enough they might turn to bright red colour even before they are properly cooked. So make sure you note down the proper timings and time the cooking.
  • To double check if the lobster is properly cooked, try to lightly pull on its antenna. If it comes out easily, your lobster is cooked properly else cook it for few more minutes and serve it hot!
  • While serving you might want to enhance you dish by serving it with some melted butter, mayonnaise and other sauces.
  • Make sure that you don’t overcook it else it becomes very hard gristly.
Experts say that the wisest and the best way to cook a lobster is to steam or boil it. However, there are other alternative methods that you can use to cook a lobster. Grilling a lobster is one of the other methods that you can follow.
Grilled Lobster
  • Boil the lobster for 5 minutes and drain the remnant water away.
  • Keep the lobster upturned on cutting board and slice it from the middle with a knife.
  • Remove tomalley (green stuff), its black vein and sand sac (located in the head area).
  • Grease the lobster with melted butter, seasoned oil or with melted seasoned butter such as garlic, herbs etc.
  • Grill the lobster for good 10-12 minutes. When the lobster is coked properly you will notice that the meat is white and cloudy in its appearance.
  • Serve it hot, immediately with some extra butter that you used before for greasing it.
So simply follow these steps next time you invite your relatives and friends over dinner and serve them with the most luring, mouth-watering and delectable dish!

Salads and salad dressing recipes

Gone are the days when salads consisted only of a couple of cut vegetables mixed together in a bowl. There are so many ways to keep healthy now and thus, there are so many types of salads too! There is literally a salad for every occasion or season. However, here are a few that you can try.
1. Coleslaw
Who doesn’t love coleslaw? It has now become synonymous to the most basic types of salads. Coleslaw is now even a side dish with so many popular dishes such as French fries, sandwiches, burgers and so on. All that coleslaw needs is around 6 cups of shredded cabbage, 1 shredded carrot, some mayonnaise, vinegar, vegetable oil, a little bit of sugar, and just a pinch of salt to taste. Toss all these ingredients together and whisk them literally. However, keep the cabbage and the carrot aside. Mix the whisked portion with the cabbage and the carrot and toss it thoroughly. See the full recipe here - http://southernfood.about.com/od/coleslawcabbagesalads/r/r80731b.htm.
2. Greek Lemon Garlic Salad Dressing
This is one the healthiest and easiest salad dressings to make. You only need a little lemon juice, half a spoon of salt, Greek seasoning or Greek oregano, olive oil and garlic cloves. A little bit of brown mustard or ground pepper would also do. Just take an air-tight jar and mix all the ingredients together – shake it furiously. Let it settle and shake again. Keep shaking the mixture around 3 or 4 times till you are sure that everything has been mixed well. Taste it and if it is too acidic, try putting in a little more olive oil to balance the mixture out. You can see the exact quantities of the ingredients here –http://lowcarbdiets.about.com/od/lowcarbsalads/r/Greek-Lemon-Garlic-Salad-Dressing.htm.
3. Watermelon, cucumber and mint salad
This is perfect to beat the heat! This is one of the most refreshing and delicious salads to ever make! You can even make it for a house party. You will need chopped watermelon, chopped cucumber, some fresh mint and some cheese. Mix these ingredients together in a salad bowl. Take the mixture out delicately and lay the salad out on a plate. Add some cheese and mint or top. You have the perfect health food ready for you. For more information, you can choose to see this –http://lowcarbdiets.about.com/od/lowcarbsalads/r/watermelonsalad.htm.
4. Sugar-Free Thousand Island Dressing
Who doesn’t like Thousand Island? Creamy and delicious, indeed. You can even put it in burgers and sandwiches and serve it as dip with French fries or chips! However, for a salad, you might want to try the sugar-free version. You will need some mayonnaise, some sour cream, some sugar-free ketchup, 3 spoons of sugar-free relish and one spoon of mustard. Mix the ingredients together and keep tasting. Try adding ingredients the way you want the dressing to taste. You can add some sweetener in the end if you need to make it sweet. See the exact quantities here –http://lowcarbdiets.about.com/od/lowcarbsalads/r/Sugar-Free-Thousand-Island-Dressing.htm.
  5. Sweet and Sour Lime Dressing
The quickest preparation time amongst all the dressings we have discussed so far! You’ll need some lime juice, water, olive oil and seasonings or sweetener to taste. Mix the lime juice and water in a bowl and add the sweetener in a desired quantity. Add salt and pepper and whisk well so that the salt dissolves fast. Add the olive oil and whisk again. It sure tastes good! Put it over even a couple of lettuce leaves and you have the perfect salad ready!

Home-style Chicken Soup for the Desi Cook

With every other person falling sick and getting the flu, its chicken soup time! This very ‘western’ concept is soon catching up with our desi folks coz it really DOES work against the common cold and flu and besides, its so yummy!!
I am talking about the real stuff here, not Maggi and Knorr. So heres a recipe that’s been put together for the Indian kitchens, where ingredients like ‘thyme’ and ‘rosemary’ have no place.
Ingredients (for 4 cups of stock)
1)  1/2 K.g. Chicken pieces-
Ask your chicken-wala to give u soup-pieces separately. These are bony and perfect for a rich healthy soup. But you can also use cold-storage chicken.
2) Vegetables:
2 Carrots, one Onion, some Lettuce(optional)
3) Spices:
1 Bay leaf, some pepper corns
The Stock:
  1. Put all of the soup pieces and some meaty pieces in a pot and add enough water to cover the pieces by an inch. Partially cover the pot and bring to a boil.
  2. Once its boiling, reduce heat to sim and add roughly diced carrots, the onion can go in whole and the lettuce leaves. Also throw in the spices with some salt.
  3. Keep it cooking till the meat turns white. Then, scoop out the meaty pieces and set aside. Overcooking these will render the meat tasteless and stringy.
  4. Now reduce the stock by simmering it for a good 20-30 minutes. This will extract the flavour from the bones and will make your stock potent enough to kill the flu bug!
  5. Your stalk is ready when reduced to about half of its original volume. Use a large spoon to gently skim the surface for the gray fatty layer, which is nothing but extra fat from the bones and meat. Throw it away.
The Soup:
Once your stock is ready, the soup isn’t far away. Simply add a little water (about 50-50) , add a few freshly chopped carrot pieces, mushrooms, some diced cooked chicken (saved from the stock), some boiled noodles or rice, boil and serve! The best part is, even if you have NOTHING but water and stock, you are fine! Just sprinkle some pepper and sit ready with a box of tissues!
The Fancy Soup:
If you are not sick and have have 5 extra minutes, roughly chop some garlic, fry it in a pan till its golden, add some water and cornstarch, a small little teaspoon of fresh cream and roughly chopped coriander. Add this to the stock, and you have “Burnt Garlic and Chicken soup”.
Now ain’t I a genius!

How to make French fries at home

French fries are best when they are crispy and crunchy. Usually homemade fries do not turn crunchy and they won’t taste as good. There different types of making French fries but what we are talking about here is known as double frying. Here are the steps on how to make Crispy French fries at home.

Here are the ingredients you will need to make French fries: -
  • 7 pieces baking potatoes
  • A dash of salt
  • 4 cups of cooking oil
Here is how you do it –
1. Peel the potatoes well. You will save more time if you use a vegetable peeler.
2. Cut the potatoes into long and thin pieces. I’m sure you have seen it outside.
3. Keep the potatoes in cold and icy water for about half an hour
4. Take the water out and dry the potatoes by keeping them on a piece of clean cloth
5. Put the oil on the stove and turn the heat high. Let the oil become completely hot and reduce the flame.
6. Place the potatoes inside the frying pan in the hot oil and let it boil for 10 minutes. Make sure that you do not put too many at once.
7. Remove the potatoes and let them cool for about 5 minutes.

9. Remove the potatoes after the 3 minutes are done and place them on a paper towel so that it will get the extra oil.
10. Sprinkle some salt for its taste.
11. You can keep some ketchup as the sauce while serving
12. Enjoy.

How to make French toast

French toast with a glass of orange juice is most definitely my favorite meal for breakfast. French toast is also known as eggy bread which is a dish of fried bread which has been soaked in egg. French toast is generally served as a sweet dish and it contains milk, sugar, cinnamon (optional), egg and bread. Sometimes instead of sugar you can add salt which will give a completely different taste of French toast. There are a total of 8 steps involved in a French toast recipe.
1. Set the stove to high heat and place the pan on top of it. Add some olive oil or butter so that the bread will not stick to the pan while being cooked.
2. Crack the eggs open and put them in a bowl.
3. Add some milk, vanilla extract, cinnamon and stir it with a fork until it is mixed very well.
4. Turn down the stove heat to medium or low after the pan has been heated adequately.
5. Take your favorite type of bread and dip it into the mixture and turn it around so that the bread completely covered by the egg mix. Put the mixture on the both the sides of the bread.
6. Place the slice of soaked bread onto the pan.
7.  Let the bread cook and turn it on both sides until it has a golden color to it.
8. Now, your French toast is ready. It is best served with syrup.
Here again I’ve mentioned what all you require for making French toast or Eggy bread.
Ingredients
  • 1 egg
  • ¼ c milk
  • 1 table spoon vanilla
  • 1 table spoon cinnamon
  • 2 pieces of bread
Utensils
  •   Medium size bowl
  • Mixing spoon or a fork
  • Frying pan
  • Stove
  • Spatula serving plate
  • Measuring cups (optional) and spoons

3 Basics of Vegiterian cooking

With more and people getting calorie conscious, most of the people are now choosing a vegan lifestyle for themselves. Not only calorie consciousness, but also the influence of PETA which is compelling people to renounce eating those tender ribs of a lamb or any other non vegetarian dish.
Thus, to get that extra anti-oxidant, fibre and green nutrient in one’s diet, one has to eat a lot of vegetables. It can get difficult for a newly transformed vegan to cook, as he is so accustomed to cooking the non-vegetarian way.  It is to be kept in mind that cooking vegetarian is not difficult at all. Thus, the three basics of vegetarian cooking –
  • Nutrient check – Vegetarian cooking is not as challenging as cooking non-vegetarian. Moreover, cooking vegetarian does not offer as much variety as non-vegetarian, so creative risks have to be taken. Also, it is important to keep in mind not to skip out on a large bulk of nutrients as are restricting it to vegetables and spices. It is essential to include items rich in protein, iron, calcium, omega-3 fatty acids and vitamin B12. Green vegetables like lentils and leguminous products like daal are rich in protein. Also, vegetables like broccoli are a rich source of calcium. Dry fruits like buts, beans and other fruits are rich sources of iron. And canola oil, flax seeds and walnut are a good source of Omega-3 fatty acids.
  •  Planning – Since, most people are new to this age old concept of cooking vegan, a lot of planning is required before heading towards the kitchen and making a mountain out of a mole hill. For a simple cooking, it is not necessary to use the gas to stir fry all the time. There are plenty of other ways of cooking delicious vegan. One can experiment with baking, broiling, boiling, roasting, grilling and also use a slow cooker to cook those vegetables. There are plenty of meat substitutes available in the market like soya nuggets and tofu. If cooked in the no-vegetarian style, they taste equally good. So in order to enjoy an ideal vegan meal, plan it well. Soon you will get in to the habit and it will become into a practice.
  •  Freshness – The main backbone of cooking vegan is the freshness of the products used. More the freshness, better the food tastes. Author Mark Bittman stresses on the use of products like olive oil, soy sauce, citrus fruits, butter, Parmesan cheese and spices which are forever fresh if well preserved. They add an extra volume to the food thus cooked and can be used in a variety of dishes. It is to be kept in mind that soft vegetables that are soft in nature should not be overcooked for it might lose out on its freshness. It is also of vital importance to use seasonal vegetables as it contains a lot of health benefits.
